That is correct if you use the G wire as the common wire then you will lose the ability to run your fan manually. Yes 40VA transformer is more then what you will need.

You can use the "G" green wire as your "C" Common wire. Your fan will still run when it is needed.

In my eye's no that is not acceptable. But we also have no control in who puts our products in. I also just realized that your dip switches are incorrect you board is not set up for Heat Pump.
